With scale, we can keep paying the farmer the proper price, but get the cost more in line to something that’s affordable. Producing organic food is about sequestering carbon and animal health, including humans. With scale, we’re bringing that cost down. Kwittken: You mentioned this is now a $60 billion industry – do you think that, one day, the cost of organic goods will be more accessible to people who have financial insecurity?
